Che Dau Xanh Nha Dam (Aloe Vera Mung Bean Sweet Soup)
Ingredients
1 Aloe Vera Leaf
1/3 cup Mung Bean (soaked for 4hrs.)
1/2 cup Sugar or to taste
1 tsp. Vanilla Sugar or Extract
3 cups Water
Optional
1 cup Coconut Milk
Pinch of Salt
3 Tbsp. Sugar
Wash and peel the Aloe Vera Leaf. Cut it into thin slices and put it in a bowl. Add a pinch of Salt, mix, and set aside.
In a large sauce pan pour in 3 cups of water. Rinse 1/3 cup Mung Bean and add it into the sauce pan.
Bring to a boil, remove the foams. Let it simmer for about 5 minutes. Rinse the Aloe Vera and set it aside.
Add in 1/2 cup Sugar or to taste. Add in 1 tsp. Vanilla Sugar or Extract. Then add in the Aloe Vera. Let it simmer for a little bit and you are done.
You can make the coconut sauce to put into the sweet soup by pouring 1 cup Coconut Milk in a small sauce pan. Add in 3 Tbsp. Sugar and a pinch of Salt.
Bring to a boil and turn off heat. To serve you can eat the sweet soup with Coconut Sauce or without it.

I've never seen the use of aloe vera in a Vietnamese recipe so this was very interesting for me. I don't know where I'd get aloe vera in the Midwest, but I must try cooking with it since it looks really healthy. I guess I can grow my own, but no way would they grow that big here.
